Unfortunately (or fortunately in Severus's case), it wouldn't be logistically possible. Polyjuice only lasts for like an hour, while fertilization takes several days.
I don't think metas could transform in other gender without some training. Changes like hair color, face, body size can be learnt but changes like genitalia might be difficult to manage without having experience with them.
I think metas learn that sensation through polyjuice to train in characteristics of other gender. We never saw Tonks undergoing full body transformation in books so we don't know the extent of her transformation capability.
Yeah, we actually don't know the scope of her transformation but theoretically it should be possible to assume another gender identity. I like the theory of polyjuice training for Metamorphmagus.
Now imagine a superspy Metamorphmagus specialising in infiltration missions, that's cool. 😸
