First that comes to mind is Yokohama Kaidashi Kikō, in which Severus moves away from civilisation and opens a café in the middle of nowhere, serving the rare customer while exploring the area, coming across tiny mysteries, drinking coffee at sunset while watching the grass undulate in the evening breeze, or listening to the sound of the rain as it patters against the roof.
Or Mushishi, which would suit his occupation. Severus Snape the Potions Master, starting to go on foraging trips deep into the Forbidden Forest and finding out he now has, perhaps due to his close brush with death, the ability to see strange ethereal creatures that are neither animals nor plants or fungi, and he begins to write an encyclopaedia about them and their effects on people, animals, and the ecosystem as a whole.
And the last series is Sayonara Zetsubō Sensei, which would be just the funniest thing ever. An overacting, pessimistic professor vs. a class full of zany weirdos examining normal aspects of wizarding/British life so closely, everything devolves into absurdity.
